Vodka Pepperoni Pizza

Instructions
Prevent your screen from going dark as you follow along.
Step 1
Preheat your pizza oven to 340°C (650°F) (stone floor temperature).
Step 2
Slowly heat the vodka sauce in a saucepan and leave over a low heat to keep warm.
Step 3
Press and open the dough into a 14-inch circle and place on a lightly floured pizza peel.
Step 4
Top the pizza with both mozzarellas first, then distribute the pepperoni over the top.
Step 5
Launch the pizza into the oven and bake with a low flame, rotating the pizza 90 degrees every minute for 4 minutes. Cook for a final minute with the flame on high to obtain a bit more colour, making sure to rotate the pizza frequently.
Step 6
Place the pizza on a cooling screen or wire rack and rest for 1 minute, then cut into 6–8 slices.
Step 7
Once the pizza has been cut, use a ladle to drizzle the warm vodka sauce over the pizza.
Step 8
Finish with basil, grated Pecorino Romano and drizzle with extra virgin olive oil.
