On Canonbury Road in North London, F.K.A.B.A.M. is its own thing, from the matte-black painted outside, the floral picnic tablecloths, intriguing artwork, and at the restaurant’s heart, one of the most iconic Gozney commercial ovens in the world. Lee takes a creative, alternative approach to food – defying convention and proudly not fitting into a box.
His passion for food started at a young age and he gained experience over a 10 year stint at London's iconic St John Restaurant where he found his love nose to tail cooking eventually becoming head chef of St John Bread & Wine in 2010. Lee left St John in 2013 looking to carve his own path and create a restaurant concept that was totally unique, which is when Black Axe Mangal was born in 2014.
From his infamous BAM squid ink flatbreads to his nose to tail approach to cooking, people from all over the world flock to the unassuming black fronted restaurant in Islington where they get to experience Lee's cooking in an intimate setting, surrounded by eclectic decor and his Warrior painted Gozney oven.
Beyond the restaurant, Lee's recognised globally for his appearances on TV shows such as 'F*ck That's Delicious' with pal Action Bronson.
Lee's not afraid to push the boundaries of what's possible and continue to redefine what it means to be a chef.
